STEAK SAUCE PROVENCAL |

Turn a simple BBQ steak into a gourmet steak by topping it off with this wonderful sauce. Makes enough for 2 steaks. |

| 2 tbsp | Butter | 25 mL | |
| 2 tbsp | Green onions, chopped | 25 mL | |
| 1 | Garlic clove, finely chopped | 1 | |
| 2 tbsp | Dry Sherry | 25 mL | |
| 1 medium | Tomato, peeled, seeded & chopped | 1 medium | |
| Few sprigs of Parsley, chopped | |||
| Salt & Pepper to taste | |||

Heat butter in pan, sauté green onion and garlic for about a minute. Add sherry, reduce by half; add tomato and parsley. Cook until just hot; do not let the tomato pieces loose their shape. Season with salt and pepper. |
