QUICK AND EASY CHINESE FRIED RICE
Here's an opportunity to use leftover rice and bits of leftover meat. Serves 2 main servings or 6 side dishes
|1/4 cup||Vegetable oil||50 mL|
|1/2 cup||Red Pepper, chopped||125 mL|
|3 - 4||Sliced fresh mushrooms||3 - 4|
|2 cups||Cold Fluffy White Rice||500 mL|
|2 tbsp.||soy sauce||25 mL|
|1/2 cup||* Diced cooked ham||125 mL|
|2||green onions, chopped||2|
|1/2 cup||** frozen petite peas, thawed||125 mL|
In small non-stick skillet make an omelette, cut in shreds and set aside.
In a large skillet, heat oil, add red pepper and mushrooms; stir-fry for 4 minutes
Add rice and stir-fry until rice is hot and mixed with oil. Add soy sauce; mix well. Stir in ham, green onions, peas and shredded omelette. Heat thoroughly.
NOTE: * Other
cooked meats such as chicken, shrimp or crab meat make nice
