Baked Mushroom Rice Serves 4. Baked rice in beef broth with mushrooms and green peppers. Always make extra, it freezes well.
Chinese Fried Ricephoto taken Serves 2 main servings or 6 side dishes Here's an opportunity to use leftover rice and bits of leftover meat.
Rice Pilaf with Noodlesphoto taken Serves 2 A simple and tasty way to serve rice.
Spanish Rice Serves 2 I always use the parboiled long grain rice, or as many people refer to it as "converted rice" which produces a rice that cooks into firm, fluffy, separate grains. This dish makes a wonderful accompaniment for white fish.
Spanish Rice Casserole Serves 4 A microwaved quick meal,  terrific for using up leftover hamburger meat, chicken or ham.

Broccoli & Cauliflower Au Gratin Serves 8 Wonderful autumn or winter time dish, great for Thanksgiving or Christmas. Can be made ahead and reheated.
Carrot & Sweet Potato Puree Serves 4 This dish can be prepared up to the baking stage early in the day and refrigerated, leaving little work at dinner time.
Cauliflower Au Gratin Serves 6 Cauliflower with a marvelous easy microwave cheese sauce, topped with crunchy breadcrumb mixture and baked until bubbling hot.
Green Beans, Celery & Almonds Optional Add a little variety to plain old green beans.
Herbed Cherry Tomatoes Serves 6 Nice presentation and great for a garnish.
Grilled Portobello Mushrooms Serves 6 Expensive but well worth it. Great with grilled steak.
Macaroni & Cheese Serves 8 Basic Baked Macaroni & Cheese. All kids will love the creamy cheese taste by combining old cheddar and velveeta.
Macaroni a la Canadienne Serves 12 An old-fashion Canadian way for baked Macaroni is; Macaroni with cheddar cheese and tomatoes.
Sautéed Cabbage & Onions Serves 4 Healthy and flavorful cabbage side dish.
Sautéed Garlic Asparagus Serves 4 Tasty and healthy way to prepare and enjoy asparagus!
Sautéed Spinach & Mushroom Serves 4 Green and glorious describes this best.
Stir-Fried Cauliflower Serves 4-6 A unique and attractive stir-fry of cauliflower, red pepper, tomatoes and frozen peas.
Sweet Potato Mousseline Serves 6-8 There are so many ways to serve sweet potato, this recipe is my favorite.
Turnip Puff Serves 6 Have a little difficulty distinguishing a rutabaga from a turnip. In Canada we call the larger yellow vegetable a turnip, but I think in the USA they refer to it as a rutabaga. This delicious recipe calls for the large yellow type turnip.
