Drain and mash salmon lightly, reserve juice, set aside. Mix
together salmon, eggs, onions, parsley and lemon juice. Add bread
crumbs and 2 tbsp [25 mL] reserved juice. Add more juice if mixture
too dry. Form into small patties and fry over medium heat, in a
mixture of oil and butter,adding more if
needed, until heated through and nicely brown.
Makes about 10 small patties. Serve with Tartar sauce
