ROAST BEEF CROISSANT SANDWICH |

Traditional French Canadian Sandwich. Croissant with roast beef, Swiss or gruyere cheese and tomato, then broiled. In many bistros they will refer to this sandwich as a Croque-Monsieur. Because the cheese is placed on top of the croissant, best to eat with a fork and knife. |

| Dijon mustard | |||
| Thinly sliced deli roast beef | |||
| Tomato slices | |||
| Gruyere or Swiss cheese | |||
| Salt and pepper to taste | |||

Slice croissants in half, spread each half with Dijon mustard. Set top half aside. On bottom half add roast beef and tomato slice. Season tomato with salt and pepper. Place under broiler until tomato begins to brown. Remove from oven, add croissant top half. Put a slice of gruyere or Swiss cheese on top of the croissant and place again under the broiler until the cheese is melted.
Serve with a nice green salad.
