Mashed Potato à la Québécoise |

| Easy and not so rich version for mashed potatoes. Obtained from The
dairy farmers of Canada. Serves 8-10 |

| 8 | Slices of bacon | 8 | |
| 5 lbs | Potatoes, peeled and quartered | 2.5 kg. | |
| 1 cup | Milk | 250 mL | |
| 4 tbsp | Butter | 60 mL | |
| 3 tbsp | Chives or green onions | 50 mL | |
| 2 tbsp | parsley | 25 mL | |
| Salt and Pepper to taste | |||

Cook bacon until crisp. Dry on paper towel and chop finely. Set aside. Cook potatoes and drain. Mash and stir in butter and milk. Season to taste. Transfer to serving platter and sprinkle with chives (or green onions), bacon and parsley. |
