GRILLED POLYNESIAN CHICKEN |

Delicious Grilled Chicken, flavored with soya sauce, brown sugar and a hint of ginger. Topped with pineapple and sprinkled with coconut. Makes 4 servings. |

| 4 | Halved boneless chicken breast | 4 | |||||||
| 2 tbsp | Soy Sauce | 25 mL | |||||||
| 1 tbsp | Brown sugar | 15 mL | |||||||
| 1/4 tsp | Ginger | 1 mL | |||||||
| 1/8 tsp | Garlic powder | .5 mL | |||||||
| 4 | Pineapple Slices in juice (drained) | 4 | |||||||
| 4 tsp | Coconut flakes | 20 mL | |||||||

| In small bowl, combine soy sauce, brown sugar, ginger, and garlic
powder; mix well.
Place chicken in ziploc bag. Pour in soy sauce mixture, seal and turn to coat all sides; let stand for 15 minutes at room temperature to marinate. Heat grill. When ready to barbecue, oil grill rack. Place chicken on gas grill over medium heat Cook for 13 minutes or until chicken is tender and juices run clear, turning once halfway through grilling time Top each with pineapple slice during last few minutes of cooking time. Remove to a platter and sprinkle with coconut flakes. |
