Grilled Pizza Dough Recipe


Excellent pizza dough made with bread flour and cornmeal, grilled to give it that restaurant grilled crust.  One "recipe" i.e. using 3 cups of the pizza dough mix makes enough to serve 4-6 people - the whole bag will serve 16-24 people.


Pizza Dough Mix
8 cups Bread flour 2 L
4 cups All purpose flour 1 L
1 cup Cornmeal 250 mL
1/4 cup White sugar 50 mL
3 tbsp Salt 50 mL
3 tbsp Baking Powder 50 mL

Pizza Dough
3 cups Pizza dough mix 750 mL
1 cup Warm water 250 mL
2 tbsp Olive Oil 30 mL
1-1/2 tsp fast rising yeast 7 mL


  • whisk pizza mix together very well and store till needed in air tight container.    

  • Mix pizza dough together and knead for about 5-7 minutes. Allow to rest 1 hour. Shape pizza dough into individual sized pizza crusts. Place on preheated bbq for 2-4 minutes, until bottom is golden brown. Remove from bbq. Dress the cooked side with whatever you like (bbq sauce, bbq chicken, purple onion, cheese etc.) and return to the bbq for 3-5 minutes, until cheese is melted and golden on other side.
