Melt 1 stick of butter in a 9 by 13 inch [23 x 33 cm] pan, add brown sugar (you may want to use less).
Sprinkle in cinnamon and layer sliced apples. Stack 12 slices of bread (about 2 inches [5 cm] high.
Beat eggs and combine with evaporated milk. Pour over the bread. Cover with foil or plastic wrap and weight with a plate or another pan to be sure all bread absorbs the egg and milk.
Refrigerate overnight.
Bake at 350°F [180°C] for 35 minutes. Let sit a few minutes before loosening the edges. Invert onto a serving plate.
