LEMON CHEW

A bar type lemon filled dessert with a coconut topping. Nice and chewy, just like its name! Makes one 8 inch square [20 cm]


BOTTOM LAYER
1 cup Flour 250 mL
1/2 cup Butter 125 mL
1 tsp Baking powder 5 mL
1/4 tsp Salt 1 mL
1 Egg, beaten 1

FILLING
2 Eggs 2
1 cup Sugar 250 mL
3 tbsp Lemon juice 50 mL
2 tsp Grated lemon peel 10 mL
1/2 tsp Baking powder 2 mL
1/4 tsp Salt 1 mL

TOP LAYER
1-1/2 cups Shredded coconut 375 mL
2 tbsp Butter 30 mL
1/2 cup Sugar 125 mL
1 Egg, beaten 1

Preheat oven to 350°F [180°C]

Bottom Layer    Mix all 5 ingredients well and press into lightly greased  pan, building up 1/2 inch [1 cm] edges. 

Filling   Beat  all ingredients until light and fluffy.  Pour mixture over crust.

Top Layer   Mix well and spread on filling.

Bake 30 to 40 minutes or until top and bottom are nicely brown.
