A bar type lemon filled dessert with a coconut topping. Nice and chewy, just like its name! Makes one 8 inch square [20 cm] | ||||
BOTTOM LAYER |

| 1 cup | Flour | 250 mL | ||
| 1/2 cup | Butter | 125 mL | ||
| 1 tsp | Baking powder | 5 mL | ||
| 1/4 tsp | Salt | 1 mL | ||
| 1 | Egg, beaten | 1 | ||
FILLING |

| 2 | Eggs | 2 | ||
| 1 cup | Sugar | 250 mL | ||
| 3 tbsp | Lemon juice | 50 mL | ||
| 2 tsp | Grated lemon peel | 10 mL | ||
| 1/2 tsp | Baking powder | 2 mL | ||
| 1/4 tsp | Salt | 1 mL | ||
TOP LAYER |

| 1-1/2 cups | Shredded coconut | 375 mL | ||
| 2 tbsp | Butter | 30 mL | ||
| 1/2 cup | Sugar | 125 mL | ||
| 1 | Egg, beaten | 1 | ||

Preheat oven to 350°F [180°C] Bottom Layer Mix all 5 ingredients well and press into lightly greased pan, building up 1/2 inch [1 cm] edges. Filling Beat all ingredients until light and fluffy. Pour mixture over crust. Top Layer Mix well and spread on filling. Bake 30 to 40 minutes or until top and bottom are nicely brown. |
