SPINACH SALAD |

An outstanding honey mustard dressing to accompany your spinach salad. Serves 4 |

| 3 tbsp | Cider vinegar | 50 mL | |
| 3 tbsp | Honey | 50 mL | |
| 6 tbsp | Mayonnaise | 75 mL | |
| 1 tbsp | Dijon mustard | 15 mL | |
| 1 tbsp | Finely minced onion | 15 mL | |
| 1-1/2 tbsp | Chopped fresh parsley | 17 mL | |
| pinch | Salt | pinch | |
| 3/4 cup | Vegetable oil | 175 mL | |
| 6 cups | Fresh spinach | 1-1/2 L | |

Heat vinegar and honey in heavy small saucepan over low heat, stirring until honey dissolves, or microwave it until honey is dissolved. Pour into bowl and cool. Whisk in mayonnaise, mustard, onion, parsley and salt. Gradually whisk in oil. Can be prepared 3 days ahead. Cover and refrigerate. Bring to room temperature before using.) Toss with chopped fresh spinach. I sometimes add about 4 crumbled slices of bacon. |
