GRILLED SWORDFISH |

Marinade in a flavorful combination of soya sauce, orange juice and herbs. This marinade goes well with most fish. Serves 4. |

| 4 | Swordfish steaks | 4 | |
| 2 tbsp | Soya sauce | 25 mL | |
| 2 tbsp | Orange juice | 25 mL | |
| 1 tbsp | Olive oil | 15 mL | |
| 1 tbsp | Fresh parsley; finely chopped | 15 mL | |
| 1/2 tsp | Fresh lemon juice | 2 mL | |
| 1 | Garlic cloves, finely chopped | 1 | |
| 1/4 tsp | Dried oregano, crumbled | 1 mL | |
| 1 tbsp | Tomato paste | 15 mL | |
| 1/4 tsp | Black pepper | 1 mL | |

Combine all ingredients, mix well. Pour over fish in a shallow dish or
ziploc bag. Let marinate one hour. Remove fish from marinade. Grill over medium hot coals or on medium setting, brushing often with marinade, for 4 to 5 minutes per side or until just firm to the touch. |
