CORNISH HENS |

Stuffed with seasoned croutons and mandarin orange then brushed with Soya sauce mixture. Serves 4 |

| 2 cups | Seasoned stuffing croutons | 500 mL | |||||||
| 1/2 cup | Diced mandarin orange sections | 125 mL | |||||||
| 1/4 cup | Melted butter | 50 mL | |||||||
| 1/2 cup | Soya sauce | 125 mL | |||||||
| 1 | Large garlic cloves, crushed | 1 | |||||||

Thaw hens and remove giblets, rinse and pat dry. Preheat oven 350°F [180°C]. Combine crouton stuffing, oranges and butter. Stuff hens with mixture. Mix Soya sauce and garlic; brush on hens. Place breast side up, on a rack in shallow roasting pan.
Roast for 1-1/2 hours or until meat thermometer inserted in stuffing reads 185°. Baste hens with pan drippings every 15 minutes. |
