In small non-stick skillet make an omelette, cut
in shreds and set aside.
In a large skillet, heat oil, add
red pepper and mushrooms; stir-fry for 4 minutes
Add rice and stir-fry until rice is hot and mixed with oil. Add
soy sauce; mix well. Stir in ham, green onions, peas and shredded
omelette. Heat thoroughly.
NOTE: * Other
cooked meats such as chicken, shrimp or crab meat make nice
substitutes. ** When buying frozen peas, look for petite or baby
peas, which are more flavorful and tender. |
