| VINAIGRETTE CATALINA |
This recipe comes from an Italian chef we had at our golf club. For lovers of catalina dressing, this is the best.

Tomato soup |
75 mL |
| 2 tbsp |
Sugar |
25 mL |
| 3-1/2 oz |
Red wine vinegar |
88 g |

Cloves garlic, minced |

| 1/4 tsp |
Salt and pepper |
1 mL |
| 1 tsp |
Paprika |
5 mL |
| 2 tsp |
Dijon mustard |
10 mL |
| 1 cup |
Oil |
250 mL |
| 2 tbsp |
Shallots, very finely chopped |
25 mL |
|
Combine all the ingredients in a jar or your favorite salad dressing bottle, shake very well and refrigerate.
Shake again each time you use it. Makes about 1-1/2 cups [375 mL].
