| BANANA FLAMBE |
An end to a great BBQ, even the dessert is made on the grill. For the kids just prepare a small one on the side without the liqueur. Serves 4

Firmly packed light-brown sugar |

Strawberries, hulled and halved |

Grated orange peel |

Orange flavored liqueur |

Cut pound cake into 16 slices (1/4 inch [1 cm] thick)
On clean grill, cook cake slices on low until toasted on both sides. Set aside.
In large cast-iron skillet on grill, over medium heat, melt butter with sugar. Peel and halve bananas crosswise, cut halves lengthwise in half. Add bananas to butter mixture, saute 2 min, turning once. Remove pan, stir in strawberries, orange peel, cinnamon.
Carefully flame liqueur, pour over fruit.
On each four serving plates, place 2 slices of cake. Top each cake slice with a scoop of ice cream; spoon fruit mixture over ice cream. Place a cake slice on top of each scoop, tilting slices toward each other to resemble butterfly wings. If desired, sprinkle with orange-peel slivers.
Note Warm liqueur before flaming, by placing the liqueur in measuring cup and microwave for 25 seconds.
