| BANANA CAKE |

Very easy and delicious old favorite. For maximum flavor and moistness, use very dark, overripe bananas. Makes one 9x9 inch cake.

CREAM CHEESE FROSTING

| 3-4 oz |
Cream Cheese, room temperature |
90-120 g |
| 1/4 cup |
Butter, soften |
50 mL |
| 1/2 tsp |
Vanilla |
2 mL |
| 1-1/2 cups |
Powdered sugar (icing sugar) |

Preheat
oven 350°F [180°C]. Grease
9x9inch [22x22 cm] square baking pan
In bowl,
cream together shortening, sugar, add beaten eggs and banana; mix well. Mix together the milk, hot water and baking soda. Combine flour, baking powder and salt, and add to the banana mixture alternately with the milk mixture. Beat well.
Pour into prepared pan and bake for 45 minutes. Frost with cream cheese frosting.
CREAM CHEESE FROSTING
Combine cheese, butter and vanilla. With an electric mixer, beat until light and fluffy. Gradually add 1 cup of powdered sugar, beating until light and easy to spread. Add additional powdered sugar for more body.
