Preheat over to 425°F [220°C].
Combine apples, brown sugar, raisins, if using, and cinnamon.
Turn into pastry-lined pie plate.
Sprinkle with lemon juice and dot with butter.
Cover with top crust, seal and flute edges, cut a few slashes in top. Brush top crust lightly with water
or milk and sprinkle with sugar.
Bake at 425°F [220°C] for 15 minutes, then reduce heat to 350°F [180°C] and
bake for 45 minutes longer or until apples are tender.
Serve with cream, ice cream or Cheddar cheese.
